vegan mozzarella slices - $4.50 (we used miyoko's creamery brand vegan mozz, but you can also make your own or sub firm tofu)
a few leaves of mint - $0.10
salt and pepper (to taste)

ready, set, @425F. light drizzle the oiland prebake until medium tan before adding your veggiemozz or tofu. slice the tomato and assemble the crostinis. top with a lil mint (basil is bae, but we ran out today..) splash the balsamic on top.
