bacon:

vegan bacon

10 sheets rice paper

2 tbsp olive oil

3 tbsp soy sauce

2 tbsp nutritional yeast

½ tsp liquid smoke

1 tsp maple syrup

¼ tsp ground black pepper

¼ tsp paprika

makes 1 pizza.

1 pizza dough

1 ½ cups vegan mozzarella 

2 tbsp olive oil 

1/4 pineapple, sliced

1 green onion, finely chopped 

¼ cup barbecue sauce

2 tbsp tomato paste

 

preheat oven to 425f. layer three sheets of rice paper and cut into thick bacon-sized strips. combine olive oil, soy sauce, nutritional yeast, liquid smoke, maple syrup, pepper, and paprika in a bowl. place three slices of rice paper on top of another in a wide bowl of warm water until all slices are soft and stick together. remove from water and let dry a few seconds. cover baking sheet with parchment paper. dip each strip in bacon marinade and place on baking tray. bake about 5 minutes or until edges are crispy.

brush dough with olive oil and roll out on a baking sheet lined with parchment paper. heat oil in a pan and lightly sear pineapple slices. combine barbecue sauce and tomato paste. spread sauce mixture over dough. sprinkle vegan cheese over the sauce. bake pizza about 15-20 minutes, or until crust is golden and cheese is melted. top with pineapple slices, roughly cut bacon slices, and chopped green onions.
