1 eggplant - $2.79

2 tbsp veggie oil - $0.07

2 cloves garlic - $0.10

1 onion - $0.10

basil (to garnish) - $0.04

soy sauce (to taste) ~ $0.10

chili sauce (to taste) ~ $0.20

2 tbsp sugar - $0.07

2 tsp cornstarch - $0.06

total cost - $3.53

caramelize onions in pan with veggie oil. add chopped garlic, then sliced eggplant after garlic browns a lil. allow eggplant to cook down with lid on, add sauce, cornstarch, and sugar to taste, and let that shit simmer until she's soft and perfect. 😍  

garnish with basil.

this one's always best served with rice (most things are).
